MEXICAN STREET CORN GUACAMOLE

The thing is, I’m pretty much always looking for an excuse to eat chips and guacamole. So, you can imagine when Cinco de Mayo rolls around I’m not going to let the day pass without diving into a big bowl of guac. Today I am bringing you two favorites made into one – Mexican Street Corn Guacamole. Eeeekkkk!! I can barely contain my excitement.

Are you familiar with Mexican Street Corn? Its grilled corn covered in sour cream, lime, cotija cheese, and chili powder. It is a flavor and texture explosion. Sweet and salty, crunchy and creamy, tangy and smoky. It’s amazing.
For this recipe, I made a quick Mexican street corn mixture and a fairly standard guacamole, then I combine the two. For preparing the corn, I’ve got two options for you. You can either grill fresh corn on the cob or you can cheat (I won’t tell!) and use frozen fire roasted corn. I have seen frozen fire roasted corn at Trader Joe’s and Whole Foods. In a pinch you could totally just use regular frozen corn.

If you have a standard guacamole recipe that you love, feel free to use that as the base, and then just add the corn mixture. It’ll be delicious as long as you have the main flavor components: avocado, corn, cotija cheese, lime, and sour cream.
You guys, this is like the best stuff ever. So good, in fact, that I might have nearly eaten that bowl of guac for my lunch yesterday. Grab some chips, pour yourself a margarita, and let’s eat all the Mexican Street Corn Guacamole.

MEXICAN STREET CORN GUACAMOLE

INGREDIENTS

  • 1 cup cooked and cooled fire roasted corn fresh or frozen see note
  • 2 tablespoons sour cream
  • 1 tablespoon fresh lime juice
  • 1/8 teaspoon chili powder
  • 2 tablespoons crumbled cotija cheese
  • 2 large avocados mashed
  • 1 teaspoon finely minced red onion
  • 1 clove small garlic finely minced
  • 2 tablespoons diced tomato
  • salt and black pepper
  • Garnish: additional crumbled cotija cheese, chili powder and/or chopped cilantro
  • Tortilla chips for serving

INSTRUCTIONS

  1. In a medium bowl, combine corn, sour cream, lime juice, chili powder, cotija cheese, and a pinch of salt. Stir to combine. Set aside.
  2. In a separate large bowl, combine mashed avocado, red onion, garlic, tomato, 1/2 teaspoon salt, and a pinch of black pepper. Once that's combined, stir in a little more than half of the corn mixture. Taste and add more salt if necessary. Transfer to a serving bowl. Spoon the remaining corn mixture on top of the guacamole and sprinkle with additional cotija cheese, chili powder, and/or chopped cilantro. Serve immediately or refrigerate tightly covered for an hour or two (any longer and it might begin to turn brown).

RECIPE NOTES

If using fresh corn, I typically boil it for about 5 minutes, then grill it, rotating occasionally, until there are grill marks on the corn. Cool and then slice the corn from the cob.

This Caramel Butter Pecan Ice Cream Pie is a fun dessert that satisfies both kids and adults. It’s super simple, and it is the perfect way to cool off during the summer months (although, let’s be honest, I eat ice cream even if it isn’t summer). 😉

This recipe starts with the crust which is made of crushed Sandies Pecan Shortbread cookies. The crust is filled with butter pecan ice cream (I used store bought) and topped with caramel sauce, whipped cream, pecans, and shortbread cookies. It’s SO good! Tell me this isn’t the most delicious way to ring in summer?

Making this ice cream pie allowed me to take a trip down memory lane. One of the cookies I remember most from my childhood are Sandies Pecan Shortbread Cookies. On Friday nights my grandparents would visit my family, and my parents and grandparents would frequently enjoy Sandies Shortbread cookies along with a cup of coffee while they visited around the kitchen table. I distinctly remember sitting with them at the table (trying to act adult-like) while stealing sips of their coffee and nibbling bites of the buttery, nutty shortbread cookies.

It had been years since I enjoyed Sandies shortbread cookies and I was so excited to dive into a package and revisit those fond memories from my childhood. This time I got to introduce my children to these delicious cookies, as well as the ice cream pie I made with them. They enjoyed them just as much as I did as a child.

CARAMEL BUTTER PECAN ICE CREAM PIE

INGREDIENTS

  • Approximately 17 Sandies Pecan Shortbread Cookies
  • 3 tablespoons unsalted butter melted
  • 1 1/2 quarts butter pecan ice cream slightly softened
  • 1/2 cup heavy cream
  • 1 tablespoon powdered sugar
  • 3 tablespoons caramel sauce
  • 2 tablespoons chopped toasted pecans
  • 3-4 additional Sandies Pecan Shortbread Cookies for garnish

INSTRUCTIONS

  1. Preheat oven to 325°F. Place 17 cookies in a food processor and process until broken into fine crumbs (alternately you can crush the cookies in a ziptop bag with a rolling pin). You should have about 1 3/4 cups loosely packed crumbs. If you're a little short, crush a couple more cookies. Combine the cookie crumbs with melted butter. Dump the mixture into a 9 1/2 inch pie dish and press the crumbs into the bottom and halfway up the sides of the pie dish. Bake for 8-10 minutes. Remove from oven and cool completely.
  2. Scoop ice cream into cooled crust and gently spread it into an even layer. Tightly cover and place in the freezer to firm up (at least 5 hours, preferably overnight).
  3. Right before serving: whip cream with powdered sugar until soft peaks form. Drizzle the pie with caramel sauce, dollop or pipe whipped cream around the edges, sprinkle with chopped pecans, and place halved or crushed cookies on the top. Serve immediately.

No frying necessary!Here’s the thing – I started off with good intentions (and by good I mean “healthier”). These adorable donut holes are baked instead of fried. Yippee! But then I went and brushed them with butter, rolled ’em in cinnamon-sugar, and filled them with Nutella. Gah! I’m sorry. And you’re welcome. Just plan a liiiiiitle extra gym time this week. These things are so addictive.

I totally lost count on how many I ate. Technically I could count the remaining donut holes and do the math, but I’ll skip the shame and say I ate “a few.” Also, I should note that I did start this week with the intention of consuming little to no refined sugar, and then I realized that tomorrow – Friday, June 3rd, is National Donut Day! So, I pretty much had to make donuts. I did this for you guys. 😉 That’s what friends are for, right? Nutella Stuffed Cinnamon Sugar Donut Holes for everyone!

Let’s talk about these beauties. Have you had a baked donut before? When baking donuts instead of frying them I like to top/coat the baked donuts in something that will add a little crunch. That helps give some of the texture that is usually lacking in a baked donut. Granulated sugar, toasted coconut, mini chocolate chips, nuts, and sprinkles all add nice crunch to the outside of a baked donut. For this recipe I used cinnamon sugar. In order to get the cinnamon sugar to stick to the outside of the donut holes, I brush the donuts with butter (I know) and then roll them in cinnamon sugar.

You can totally eat them just like that, or, you can put some Nutella in a piping bag and fill the donuts with a good sized dose of the creamy chocolate hazelnut spread. They’re great either way!
Breakfast, dessert, midday snack? All of the above? You choose. You will love these flavorful donuts/doughnuts (← which is it?). I’m going with donuts. It feels less fancy.

INGREDIENTS

  • 1/4 cup vegetable oil
  • 1/4 cup granulated sugar
  • 3 tablespoons light brown sugar
  • 1 egg
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 teaspoon pure vanilla extract
  • 1 1/3 cups all purpose flour (can swap out half for white whole wheat flour if desired)
  • 1/2 cup milk

TOPPING:

  • 4 tablespoons unsalted butter melted
  • 3/4 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/3 cup Nutella chocolate hazelnut spread

INSTRUCTIONS

  1. Preheat the oven to 400°F. Thoroughly grease a 24-count mini muffin tin.
  2. Using a hand mixer or stand mixer, beat the vegetable oil and sugars until smooth. Add the egg, beating to combine. Stir in the baking powder, baking soda, cinnamon, salt, and vanilla. Add half the flour, beat until combined. Add the milk, beat until combined. Add the remaining flour, beat until combined.
  3. Divide the batter between 24 mini muffin cups. I used a cookie scoop and placed a heaping 2 teaspoons of batter into each cup. Bake for 8-10 minutes, until the top springs back when you touch it. Place on a rack to cool for a few minutes.
  4. Set up two large shallow bowls. Place melted butter in one, and combine sugar and cinnamon in the other. Once the donut holes are cool enough to handle, lightly brush them with butter, then immediately roll in cinnamon sugar.
  5. Fill a piping bag fitted with a small open star tip with Nutella and gently insert the tip into the side of each donut hole and squeeze a little Nutella inside.
